When everyone innovates from the same data sources, the shelf starts to fill with the same ideas. Our 2027 Flavour Forecast takes a different route: it's built on what nearly 200K Australian and New Zealand households actually plan, list and cook, and which of those flavours are moving from home kitchens onto supermarket shelves.
Here's what's in the report, how to get it, and a few other reads we've been chewing on.
Why flavour forecasting needs local, behavioural data
Our report isn't based on vibes. It's grounded in first-party behavioural data: we see what nearly 200K ANZ households plan, list and cook on Appetise, and which flavours are moving from home kitchens onto supermarket shelves.
Two signals do the heavy lifting. User-uploaded recipes show us what's resonating with home cooks, while our supermarket data tells us which products are launching and which are sunsetting.
It's also a localised report rather than a global one. At a time when everyone's using the same data sources to create and innovate, it's hard to stand out on shelf. A read on what's happening in Australian and Kiwi kitchens can give your brand an edge.
What's inside the 2027 Flavour Forecast
The full report runs to 80 pages and is designed to inform your NPD for next year. It includes:
- 170+ flavours categorised, including what's past peak
- 28 flavours tracked from shelf today to where they could show up next
- Eight white-space NPD opportunities
- Flavour deep dives, including the next yuzu and what comes after gochujang.
It also explores the four major flavour territories of 2027, what's heating up and cooling off in Australian and Kiwi kitchens, and what we predict will hit supermarket shelves next.

Also on our radar
Big CPG's awkward era. Having all the data doesn't always tell you why something works. The data can tell big corporates what consumers want (and what to copy), but it may not paint the full picture of why people are buying: the je ne sais quoi cool factor. That's the difficulty brands like PepsiCo and Coca-Cola face as they launch prebiotic, protein and fibre products to emulate brands like Olipop and Poppi.
For SnackaChangi, being ridiculous is a marketing strategy. Brent from the SuperGoods newsletter looks at how New Zealand chip brand SnackaChangi has used entertainment and unhinged marketing to become one of Griffin's best-selling chip brands. SnackaChangi has recently been ramping up its expansion in Australia.

Whole Foods Market predicts 2027 will be the year of terroir (seeking a "taste of place" and product origin), Japanese comfort food, food as skincare, and a rise in bitter flavours.
